Niçoise Salad with Salmon
Method
  1. For the dressing add all ingredients in a jar with a lid and shake. Keep in the fridge.
  2. Wash the potatoes and green beans. Cook separately in boiling water with salt. The green beans will need 10 minutes and the potatoes approximately 10-15 minutes or until a fork slides out of them.
  3. To make hard boiled eggs, cook the eggs for 10 minutes. Let them cool, peel and cut in half.
  4. To serve the salad, make a bed with the green leaves. Start placing the different ingredients: eggs, salmon, olives, green beans, tomatoes, and cucumber around the plate. Pour the dressing over the salad and sprinkle the chives on top of it as a garnish.

Niçoise Salad with Salmon

Fresh and zesty for summer and can be made with fresh salmon or tinned salmon for a more budget friendly option.

Ingredients
  • 3 whole eggs
  • 750g of baby potatoes
  • 2 cans of salmon
  • 2 tablespoons of chives
  • 1/3 cup of black olives
  • 150g of fine green beans
  • 1 bag of mixed green leaf salad
  • 1 cup of cherry tomatoes, halved
  • ½ cucumber, cubed
  • For the dressing:
  • ½ cup of olive oil
  • 2 lemons, juiced
  • 2 teaspoons of grain mustard
  • 2 teaspoons of honey
  • ¼ tsp of salt
  • Pepper
