Method
- For the dressing add all ingredients in a jar with a lid and shake. Keep in the fridge.
- Wash the potatoes and green beans. Cook separately in boiling water with salt. The green beans will need 10 minutes and the potatoes approximately 10-15 minutes or until a fork slides out of them.
- To make hard boiled eggs, cook the eggs for 10 minutes. Let them cool, peel and cut in half.
- To serve the salad, make a bed with the green leaves. Start placing the different ingredients: eggs, salmon, olives, green beans, tomatoes, and cucumber around the plate. Pour the dressing over the salad and sprinkle the chives on top of it as a garnish.
Niçoise Salad with Salmon
Fresh and zesty for summer and can be made with fresh salmon or tinned salmon for a more budget friendly option.

- 3 whole eggs
- 750g of baby potatoes
- 2 cans of salmon
- 2 tablespoons of chives
- 1/3 cup of black olives
- 150g of fine green beans
- 1 bag of mixed green leaf salad
- 1 cup of cherry tomatoes, halved
- ½ cucumber, cubed
- For the dressing:
- ½ cup of olive oil
- 2 lemons, juiced
- 2 teaspoons of grain mustard
- 2 teaspoons of honey
- ¼ tsp of salt
- Pepper
