Method
- Preheat the oven to 200ºC, fan 180ºC, gas 6.
- Cut your chicken into bite sized chunks to suit the kids.
- Crush the cornflakes (it's good to keep a variation in size of crumbs)
- Season the flour, you could even add paprika, garlic salt or parmesan.
- Beat the eggs.
- Coat the chicken in flour, dip in egg and coat in cornflakes.
- Transfer to a baking tray and cook for 20 minutes.

- 125g (4oz) cornflakes
- 3 tbsp plain flour
- 2 medium eggs
- sea salt
- parmesan (optional)
- paprika (optional)
- garlic salt (optional)
