Beer Braised Spare Ribs
Method
  1. Grate the apple in to a large roasting tin deep enough for your ribs to fit.
  2. Bind your ingredients together and slowly whisk in your ale.
  3. Place ribs in to marinade over night. Wrap tray in cling film refrigerate over night.
  4. Pre-heat your oven to 140ºC.
  5. Remove cling film from roasting tray and cover with tin foil. Place tray in to oven and cook for 3 hours.
  6. After 2 hours check marinade hasn’t completely evaporated - if it has, simply add a cup of water to cover the ribs again.
  7. When they’re done the ribs will be succulent & tender.
  8. Finally turn the oven up to 220ºC for 10-15mins until ribs caramelise.

It's great having an off licence to hand for a little experimentation with wines and ales in your cooking! This marinade for pork ribs incorporates a bottle of dark ale. Marinade overnight - it's worth the wait!

Marinade Overnight / Cook for 3 hours

Ingredients
  • 2 apples with skin
  • 200ml honey
  • 100ml malt vinegar
  • 4 tbsp mustard
  • 4 clove of garlic
  • 3 tbsp worcestershire sauce
  • 2 tbsp chilli flakes
  • 1 chicken stock cube (crumbled)
  • 1 tsp salt
  • 1 tsp cracked pepper
  • 1 bottle of dark ale
  • 2kg pork ribs
